Sips of the Week Laurie tasted these Sips of the Week from Pepper Bridge Winery and Amavi Cellars before talking to winemaker Jean Francois Pellet. Pepper Bridge Winery Cabernet Sauvignon 2010, Walla Walla, WA $60 Winemaker’s Notes: Distinctive and refined, this Cabernet Sauvignon offers aromas of black cherries, blackberries, rose-bush brambles, and crushed gravel with hints of cedar and pencil lead. Uplifting acidity gives this wine a focused energy with pure flavors that expand on the palate. Layers of mixed berries, black and red cherry, currant, and plum lead to a long, lingering finish. Velvety tannins provide a supple mouthfeel. Amavi Cellars Cabernet Sauvignon 2011, Walla Walla, WA $29 Winemaker’s Notes:  The aromatics of this wine immediately greet you with earthy scents of dusty brambles and dried mint that combine elegantly with notes of bright fruit. This carries over to the palate in a lively combination of black cherries, raspberries, currants, and fig weaved harmoniously with exotic spices. Featured Interview Born and raised in Switzerland, Winemaker Jean-François Pellet is a third-generation wine grower. Working alongside his father, who has managed the same vineyard for 30 years, Jean-François always knew what he wanted to do with his life: make world-class wine. His experience and reputation for meticulous winemaking brought him to the attention of Heitz Cellars in the Napa Valley, where he worked for four years. Pepper Bridge Winery then recruited him, so he moved to the Walla Walla Valley to become that winery’s creative force. His success at Pepper Bridge (where he is still the winemaker, as well) allowed him the opportunity to join the Amavi partnership and to apply his winemaking skills to different grape varietals, particularly Syrah and Sémillon.
