Randy Thompson President of Big Cork Vineyard and winemaker Dave Collins joined Laurie in studio to talk about their wines, how the company got started and plans for their new tasting room. Big Cork Vineyard Chardonnay 2012, Maryland Winemaker’s Notes: Big Cork Chardonnay is a masterful blend using both tank fermented and French oak barrel fermented wines. In addition to the impression of Anjou apples and fresh vanilla in this wine, a hint of melon is provided by the 6% blend with Viognier. Big Cork Chardonnay pairs nicely with a many types of dishes including chicken, hearty seafood, and pasta. Serve slightly to moderately chilled. Big Cork Vineyard Cabernet Sauvignon 2012, Maryland Winemaker’s Notes:Big Cork Cabernet Sauvignon is a muscular wine, and can pair with the heartiest of beef and game. Blended with Cabernet Franc and Malbec, and aged in 100% French oak, this wine is fully structured with strong impressions of dark fruit with hints of cassis.
