Winemakers Notes: Intense touches of fresh fruit (citrus, apple, pineapple) along with touches of yeast and bread making and an anisette background with a touch of hay. Light and subtle, with a good presence of carbon, fresh and very elegant.

About Cava:
Made primarily in the Penedès region of northeastern Spain, Cava is often made in the traditional Champagne method. A blend of three grape varieties that are native to Spain, these sparklers can have all the complexity of Champagne. In fact there is more Cava made in the world than any other sparkler! Finer examples are dry and crisp with wonderful citrus flavors and subtle aromas of baked bread. Great with anything you would pair with Champagne or alone! Wonderful Cavas can be found in many price ranges from under $10–Freixenet or Cristalino to higher end versions in the $15-20 range–Mont Marcal or Segura Viudas.
